Chicken noodle soup for Christmas eve
1: Prep the chicken
Get a Costco chicken and put it in the pot along with about 1 can of broth and add enough water to cover. Simmer for about a half hour.
2: Strip the chicken
Remove the chicken from the liquid and place it in a rectangular pan. Strip the meat and chop it into a size you like. Save the skin!
Add the meat back into the pot.
Melt 1/2 stick of butter and fry the chicken skin in it. Then add 1 package Mirepoix mix (carrots, celery, and onion) and cook another 10 minutes or so, until the water boils off and the veggies are cooked to your liking.
Add the veggies and skin back into the pot.
Bring the soup to a low boil, then hold the frozen noodle block by one end, and stir the soup with the other end. This will cause the block of noodles to thaw and break apart. Allow to boil for another 5 minutes or so, then turn the heat down.
